beetrootThis year, our beetroot harvest has been good, esepcially now we have discovered earthing up the roots as they grow greatly reduces the number eaten by mice. We’ve been enjoying them as a salad with grated carrot: cook the beetroot [microwaving 6-10 mins in a covered dish is easiest], cool, peel and dice; mix with an equal weight of grated carrot and add a dressing of 2 parts balsamic vinegar mixed with 5 parts olive oil [500g of salad needs about 100ml of dressing]; season to taste.
